Butter Almond Citrus Rice

I am not a big fan of Rachael Ray, however I actually watched one of her Food Network shows while folding laundry a while back. She made this awesome rice and I knew I had to try it. That very evening I went to the grocery store to pick up all the ingredients. It is such a yummy treat! I was on my own for dinner tonight and I made a big bowl. Very simple and very good. Enjoy.

2 T Butter (I prefer Smart Balance spread)

1/2 cup Slivered or Sliced Almonds

2 cups White Rice (I use Jasmine Rice)

1 Orange zested

1 Lemon zested

1 quart chicken stock

Heat a sauce pot over medium heat, add butter to the pot and melt. Add almonds and toast 3 to 4 minutes. Add rice and the zest of an orange and a lemon then turn the rice to coat, cook 1 minute. Add stock and bring to boil, reduce to simmer, cover and cook 17 to 18 minutes.

YUM-O! ( as "Ray-Ray" would say...LOL!) Not a BIG fan of hers either...now I need to see her on Trisket boxes at the store too??

Oh that does sound yummy. I catch her show ever so often. I have made a few things, and I have yet to be disappointed. I will have to try this one.

Just popped over again Karla to take your recipe, i have the ingredients now and want to make it. took me a while but in case anyone needs a conversion, one quart is equal to 950ml or .95L (approx 4 cups)
